For anyone maintaining ventilation in Maastricht, that means more grease, more small extract ducts and more requirements from insurers. Below you will read which limits apply to grease layers, how to match the frequency to the kitchen and which equipment goes with it.

No law says how often a hospitality extract duct must be cleaned. KHN (Royal Dutch Hospitality Association) confirms this. The owner must, however, maintain the extraction installation and the duct in such a way that no fire hazard arises, and fire insurers require regular maintenance.
In practice these requirements come back again and again:
- Rabobank advises professional cleaning at least once a year, and twice a year for a fryer restaurant.
- The prevention conditions of Goudse ask for grease filters to be cleaned or replaced weekly, and for the extract duct and motor to be inspected annually and cleaned by a specialist if necessary.
- KHN mentions a report, photos and a certificate as a way to show that the duct is clean.

How thick can the grease layer in a kitchen duct become?
Grease is trickier than dust, because you cannot see it building up. KHN points out that serious contamination is often not visible to the naked eye. Measuring is therefore the only reliable basis.
The certification scheme of NVRL and TNO uses an intervention value of 500 µm of grease. After cleaning, no more than 200 µm may remain. Measurements are taken with a wet film thickness gauge: one sample behind each extraction hood and one per 10 metres of duct. According to a secondary source, EN 15780:2025 also contains guidance for commercial kitchen extraction for the first time, with comparable values.
Fictional example: a restaurant with two hoods and 25 metres of duct. That means two samples at the hoods and three along the duct, at the spots you will use again for the next measurement.
Matching the interval to the hours the kitchen runs
A lunch café and a kitchen that runs from early morning until closing time do not need the same schedule. A British supplier of kitchen extraction links the interval to the number of operating hours per day:

Alongside kitchens, Maastricht has many buildings for accommodation and leisure. There, the work is often in small extract ducts from bathrooms and toilets, with bends right behind the valve. A brush on a shaft does not always get through.
